Garlic Mashed Turnips: Squirrel Hill Food Pantry Healthy Recipe Series

Turnips are a great alternative to potatoes and can be used as a substitute in almost any recipe. Try this Mashed Turnip recipe with an extra garlic health kick! Bonus: Use up some of your leftover horseradish from your Passover Seder!

Garlic Mashed Turnips

Ingredients:

  • 6 large turnips (approximately 2 lbs), peeled and cut into chunks
  • 8 garlic cloves, peeled and sliced
  • 2 tablespoons of butter or ghee
  • 2 tablespoons of prepared horseradish
  • 3 tablespoons chopped fresh chives
  • Salt and pepper to taste

Directions:

  1. Place the turnips and the garlic in a saucepan with a tight-fitting lid
  2. Add water to fill about halfway, cover, and place over medium-high heat
  3. Bring to a boil, turn down the burner, and simmer until soft (about 15 minutes)
  4. Drain the turnips and garlic
  5. Using a potato masher, mash the turnips and garlic together
  6. Stir in the butter, horseradish, salt, and pepper and mix well
  7. Just before serving, stir in the chives
