Slow Cooker Santa Fe Chicken: Squirrel Hill Food Pantry Healthy Recipe Series

Slow Cooker Santa Fe Chicken

Prep Time: 20 mins
Cook Time: 8 hrs
Serves 8

Ingredients:

  • 1 1/2 pounds chicken breast
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) black beans, rinsed and drained
  • 8 oz frozen corn (can substitute canned corn, drained)
  • 1 can (14.5 oz) chicken broth
  • 1 onion, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Combine chicken broth, beans, corn, tomatoes, onions, garlic powder, cumin, cayenne, salt, and pepper in the slow cooker.
  2. Season chicken breasts with salt and lay on top.
  3. Cook on low for 8-10 hours or on high for 4-6 hours.
  4. Thirty minutes before serving, remove chicken and shred.
  5. Return chicken to slow cooker and stir in. Adjust salt and seasoning to taste.
  6. Serve over rice or tortillas with your favorite toppings, including avocado, lime juice, chopped cilantro leaves, low fat sour cream or grated cheddar cheese.
