Sweet Potato & Chickpea Chili: Squirrel Hill Food Pantry Healthy Recipe Series

Budget-friendly slow cooker meals are always a winner. Here is an easy and delicious vegetarian chili that can be put together using ingredients you probably already have in your pantry.

Sweet Potato & Chickpea Chili

Ingredients:                                                                 
  • 1 can (28 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 Tbsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 cup veggie broth or stock
  • 1 large sweet potato, peeled and cut into cubes
  • 4 cloves garlic, minced
  • 2 onions, diced
  • 2 carrots, peeled and diced
  • 2 cans (15 oz) of chickpeas (garbanzo beans), drained and rinsed
  • 1 spicy pepper, diced (optional)
Directions
  1. Add all ingredients to a slow cooker. Mix until thoroughly combined.
  2. Cook on lowest setting for 8-10 hours.
  3. Ingredients can be made ahead; combine in the slow cooker and refrigerate the cooker pot over night.
  4. To serve, gently stir in the juice of half a lime.
  5. Serve with or without toppings: Avocado, chopped fresh cilantro, sour cream or Greek yogurt, or tortilla chips.
